Baked French Toast with Fresh Berries

Looking for something special to make for Mother's Day? Baked French toast is simple to make, can be prepared the night before and popped into the oven the next morning! 

Ingredients:

2-3 Tbsp softened butter for baking dish
1 loaf crusty bread, cubed
8 eggs
2 cups milk
1/2 cup heavy cream
1 cup brown sugar
2 Tbsp vanilla extract
1 cup fresh strawberries, sliced
1 cup fresh blueberries

Directions:
  1. Coat a 9x13 inch baking dish with butter.
  2. Arrange bread, strawberries and blueberries evenly in the baking dish.
  3. In a large bowl mix eggs, milk, cream, brown sugar and vanilla.
  4. Pour egg mixture evenly over bread and berries.
  5. Cover tightly and refrigerate for 2 hours or overnight.
  6. When ready to bake, preheat the oven to 350 degrees.
  7. Remove cover and bake between 45 minutes and one hour or until golden brown.  
  8. Serve warm with butter and syrup. Enjoy!
