Oatmeal Snack Bars

On-the-go breakfast or snack!

I'm so glad the weather has finally cooled down so I can put the oven on again!  These bars are great for breakfast or snacks and you can add in your favorite 'mix-in' depending on what your family likes!

Ingredients
1/2 cup vegetable oil
1 cup brown sugar
1 egg
1/2 cup skim/low-fat milk
1 tsp. vanilla
1 cup whole wheat flour
1/4 tsp. salt
1/2 tsp baking soda
1 tsp. ground cinnamon
1/2 tsp. nutmeg
2 cups quick oats
1 cup wheat germ
1/2-1 cup mix-ins (any combination of the following:  dried cranberries or blueberries, chocolate chips, coconut, raisins, chopped walnuts)

Directions
Heat oven to 350 degrees
Grease 9"x13" pan
Mix oil, brown sugar, egg, milk and vanilla until well combined
Add remaining ingredients (except 'mix-ins') and stir well
Add any combination of 'mix-ins' and stir well
Bake 20 minutes or until toothpick comes out clean
Cool and cut into bars
Enjoy now or freeze for later!
